THE CAPRIZI PROJECT
Caprizi in Friuli means "caprice", the project reason that gave birth to this product. Grapes of different varietals of hilly vineyards with excellent sun exposure allow to obtain a richness of extract, varietal typicity and consent us to do a late harvest.
Merlot has always been in the Rajade vineyards and has always been used.
We have only decided to make it a wine suitable for long aging.
To get the best out of our grapes, we have chosen to make skin maceration directly in barriques.
For about 15 days we manually proceed to fulling, then the practice of delestage is adopted.
After fermentation the wine is put back into the same barriques for a period of 24 months followed by a further 6 months of aging in the bottle.
CABERNET SAUVIGNON RISERVA
Together with the Merlot Riserva our Cabernet Sauvignon Riserva is the demonstration of how Collio is a great land from which it is possible to obtain not only splendid and renowned white wines but also red wines with important tannins.
Also for the Cabernet Sauvignon maceration takes place in the barriques, always followed by manual fulling and by the practice of delestage.
The wine is then aged in the same barriques for a period of 24 months followed by a further 6 months of aging in the bottle.
